About Us

Market Day Canele came out of the oven after dozens of experiments that focused on fresh, delicious, classical canele. We learned that canele baking relies as much on technique as on a recipe. Perseverance paid off. Buckets of tears later we had a breakthrough! With confidence enough to offer our canele at market we began to bake for Sunday Market at HeadHouse Shambles in Philadelphia. Thanks to our discerning and adventurous market customers for your devotion to our canele.

Chocolate Almond Florentines

When the weather is right, cool-dry, we bake Florentines for market. We use local butter, cream and honey. We candy cherry, orange, lemon and ginger at the bakery and freshly toast almonds. Valhrona 70% and Fleur de Sel is slathered between the tuiles.

Cucarachas look a little like critters but they have nothing else in common. These are dried chilis that we crisp in extra virgin olive oil and finish with heirloom local garlic and Fleur de Sel. They are exponentially tastier than conventional crushed red pepper. These are astonishgly delicious with pizza, roast pork sandwiches, hoagies, cheese steaks, pasta, kim chi, chicken wings ....

Fleur de Sel Caramel

You can find our Fleur de Sel caramel at FairFood FarmStand in Reading Terminal Market, Green Aisle and Quince Markets. These are freshly made caramels using Lancaster County butter and cream. We flavor these with a dose of deeply infused rum.
